Remedial Massage Therapist Kat Share's Her Crunchy Asian Beef Salad Recipe

At Just Knead It - Sports and Remedial we are on a mission to change Australian's attitude towards health - so you can live the life you envisage. The statistics are scary on how much are lives are impacted and how much money we as a nation spend on conditions that are preventable with changes to risk factors. These include lower back pain, diabetes, cardiovascular disease and conditions caused by smoking and drug use ($65 Billion in 2011). With small shifts and simple changes we could make a world of difference!

We get that a big part of this shift is food. Yet there is a real stigma around health food not being very appetising. We're on a mission to break this myth! A perfect example is Kat's Crunchy Asian Beef Salad! This recipe is quick, simple and really flavoursome.

Crunchy Asian Beef Salad

15 mins prep, 5 mins cook time
Serves 1

Ingredients:

  • 100g Good quality steak

Dressing
  • Juice of 1 lime/ lemon (lime is better, doesn't need to be exact!)
  • Dash (start with ¼ tsp) of Fish Sauce
  • Dash (start with ¼ tsp) of Sesame Oil

Salad - What ever is in the fridge or if you want specifics!
  • Small Hand Full Mint
  • Small Hand Full Coriander
  • 1 Spring Onion thinly sliced
  • 1 Carrot - use a peeler to create long strips (see above)
  • ⅓ Continental Cucumber - use a peeler to create long strips (see above)
  • ½ tomato roughly cut.
  • 1 tsp Small Handful of Peanuts
  • Optional:
    • 1 tsp of Deep Fried Shallots (Available in the asian section in most large supermarkets)
    • 2 Kaffir Lime Leaves thinly sliced into fine strips

Method:
  1. To be really fancy leave a few nuts, spring onion slices and optional deep friend shallots and kaffir lime leave out to dress the dish at the end!
  2. Dressing - Combine all ingredients (to taste) it should be salty and tangy with a hint of sesame
  3. Salad - Combine all ingredients. Add half of the dressing to the salad and toss through.
  4. Steak - Cook steak whole to preferred level of 'doneness!' and leave to rest for 2 or 3 minutes. Slice the steak thinly and pour the rest of the dressing over the steak. Keep the juices!
  5. Make it look fancy by strategically placing steak slices, nuts, optional deep friend shallots and spring onions!
  6. Poor last bit of the juices/ dressing amazingness over the salad and tuck in!

Tips:
  • Leave the salad undressed and the nuts separate if you are planning on pre-making it. Still add half the dressing to the steak so it soaks in! Dress at the last minute possible so it stays crunchy!
